According to the American Pie Council (APC), pies date back to the ancient Egyptians. The type of pies we know and love today, however, are based off of the ones made in Medieval Europe. Medieval Europeans, according to TIME, filled what they called “pyes” with meat and spices. In addition to meat, the Romans also used mussels and other types of seafood in their versions. With Thanksgiving just around the corner, many of us have got our eyes set on pumpkin pie. Though pumpkin pies were *not* at the first Thanksgiving celebration in 1621, the first record of them can be found in English cookbooks from the 1670s. The first known American cookbook (*The American Cookery* by Amelia Simmons) was published in 1796 and includes a recipe for pumpkin pudding baked in a crust. **Whether you are a pumpkin pie or other-pie fanatic, this list of 25 pies will get you excited for Thanksgiving (or really just any time you feel like treating yourself).
